Instructions

Preparation

  1. Step 1: Mix the sauce in a bowl.

  2. Step 2: Prepare the noodles according to the packet directions just before cooking.

Egg ribbons

  1. Step 3: Heat 1 tbsp oil in a large skillet over medium heat. Pour in the egg and swirl to coat the base. Cook for 1 minute until mostly set, then flip.

  2. Step 4: Slide the omelette onto a cutting board and roll it into a loose wrap. Slice into pieces 1 cm (1/3 inch) thick to make egg ribbons.

Cooking

  1. Step 5: Heat the remaining 1 tbsp oil in the same skillet over high heat.

  2. Step 6: Add the garlic and chicken. Cook until half the surface of the chicken turns white.

  3. Step 7: Add the prawns and cook for 1 minute, until the chicken is mostly cooked.

  4. Step 8: Add the cabbage and bean sprouts. Toss for 1 minute, until slightly wilted.

  5. Step 9: Add the noodles, green onions and sauce. Toss for 1 to 2 minutes, until the sauce reduces and the noodles caramelise slightly.

  6. Step 10: Toss through the egg ribbons and serve immediately.

Notes

Ingredient notes

  • Use yellow or wheat noodles rather than rice noodles. Choose one of the three noodle options in the ingredients.

  • Kecap manis can be replaced with dark sweet soy sauce.

  • Dark soy sauce can be replaced with more light soy sauce or all-purpose soy sauce. Do not replace the light soy sauce with more dark soy sauce.

  • If you cannot consume oyster sauce, use vegetarian mushroom oyster sauce instead.
