Chow Mein Sauce

Equipment

  • Bowl
  • Large skillet

Instructions

  1. Step 1: Mix the sauce ingredients in a bowl.

  2. Step 2: Heat the oil in a large skillet over high heat. Add the garlic and cook for 10 seconds.

  3. Step 3: Add the chicken and cook until it has mostly changed from pink to white, then add the sauce.

  4. Step 4: Cook for 1 minute, then add the coleslaw mix and the white part of the green onions.

  5. Step 5: Cook for 1 1/2 minutes, until the cabbage wilts. Push everything to one side of the skillet to make room for the ramen.

  6. Step 6: Add the water, then fit the ramen cakes side by side in the skillet.

  7. Step 7: When the water simmers, leave the noodles for 45 seconds. Flip them, then leave for 30 seconds.

  8. Step 8: Loosen the noodles, add the beansprouts and green onion, then toss for 1 1/2 to 2 minutes, until the sauce reduces and coats the noodles.

  9. Step 9: Serve immediately.

Notes

Ingredient options

  • Use any brand of instant ramen or noodles, as long as both noodle cakes fit in the skillet. Discard the seasoning packets.

  • For homemade coleslaw mix, finely slice 2 cups green cabbage and 1 cup carrot.

  • Use light or all-purpose soy sauce; avoid dark or sweet soy sauce.

  • Hoisin sauce can replace oyster sauce; it adds a hint of five-spice flavor.

  • Chinese cooking wine or mirin can be replaced with dry sherry. For a nonalcoholic option, use low-sodium soy sauce and replace all the water with low-sodium chicken stock.

  • Toasted sesame oil gives a stronger flavor, but untoasted sesame oil also works.

Adjusting the noodles

If the noodles are not tender enough, add more water and toss them longer. If they become too thick, add a little water to loosen them.
