Instructions

Oven method

  1. Step 1: Preheat the oven to 180°C/350°F.

  2. Step 2: Carefully break or cut the stems off the mushrooms.

  3. Step 3: Chop the stems to use as filling.

  4. Step 4: Place the mushrooms cap-side up. With a small, sharp, thin knife, carefully cut a small cross in each mushroom without splitting it.

A sequence of photos showing mushroom stems removed, a cross cut in a mushroom cap, filling added, and the mushrooms baked.

Tip: The incision lets excess water drain as the mushrooms bake.

  5. Step 5: Brush the tops with oil, then quickly sprinkle with salt and pepper so it sticks.

  6. Step 6: Flip the mushrooms and lightly dab the insides with the remaining oil. Sprinkle with salt and pepper.

  7. Step 7: Fill the mushrooms with pizza sauce. Sprinkle over the chopped mushroom stems, onion, half the salami and half the olives.

  8. Step 8: Bake for 10 minutes, then remove from the oven.

Tip: This is the first bake; add the cheese during the second bake.

  9. Step 9: Top with the cheese and the remaining salami and olives.

  10. Step 10: Bake for a further 10 minutes, until the cheese is melted. Serve immediately.

BBQ option

  1. Step 11: Preheat the BBQ to medium-high.

  2. Step 12: Follow the same preparation and topping steps, cooking with the lid closed for 10 minutes for the first bake, then 5–8 minutes for the second bake.

Notes

Choose large, cup-shaped mushrooms that can hold the filling, and make sure they are free of cracks.

For softer mushrooms, leave them in the oven longer.

Store leftovers in the refrigerator for up to 3 days. Reheat in the microwave.

Cut a small cross in each mushroom cap to help excess water drain as it bakes. The two-stage bake keeps the filling in place while the cheese melts.
