Instructions

  1. Step 1: Preheat the oven to 220°C/450°F (200°F fan).

  2. Step 2: In a large bowl, toss the mushrooms with the butter, oil, garlic, salt, and pepper using a rubber spatula.

Mushrooms being tossed in a bowl, followed by stages of roasting on a baking tray.
  3. Step 3: Spread the mushrooms on a baking tray and roast for 25 minutes. Do not toss or turn them.

  4. Step 4: Remove the tray from the oven. If using lemon and thyme, push the mushrooms together on one side of the tray, drizzle with lemon juice, sprinkle with thyme, and toss. Serve immediately.

For large mushrooms

  1. Step 5: Place the mushrooms cap side down, with the stems facing up, in a medium baking dish so they fit snugly.

  2. Step 6: Spoon 1 teaspoon of butter over each mushroom, then brush the edges with the remaining butter, or carefully drizzle it over the edges.

  3. Step 7: Drizzle with olive oil and sprinkle with salt and pepper.

  4. Step 8: Roast without turning for 20 minutes for mushrooms that are tender but still slightly firm, or 25 minutes for tender mushrooms. Juices will collect in the pan and in the mushroom caps.

  5. Step 9: Squeeze over a little lemon juice and sprinkle with thyme. Serve the mushrooms drizzled with the pan juices.

Notes

Serve as a side or main. For a main, try the mushrooms with polenta, mashed potatoes, or toast spread with ricotta.

Large mushrooms release more juices, which can be drizzled over them when serving.
