Instructions

  1. Step 1: Preheat the oven to 180°C/350°F.

  2. Step 2: Put the mushrooms in a large bowl. Pour over the hot melted butter, add the garlic, salt and pepper, and toss well.

  3. Step 3: Put the rice, broth, water, thyme and garlic powder in a baking pan measuring about 22 x 33 cm (9 x 13 in). The recipe also gives 30 x 24 cm (12 x 9.5 in) as the pan used; keep close to these sizes.

  4. Step 4: Mix and shake the pan to spread the rice evenly.

  5. Step 5: Spread the mushrooms over the rice. They will be partly submerged, but should cover nearly the whole surface.

  6. Step 6: Drizzle the olive oil over the mushrooms.

  7. Step 7: Bake for 35–40 minutes, until the mushrooms are golden. Remove from the oven and let rest for 5 minutes.

  8. Step 8: Add the optional extra butter and the scallions. Toss them through the rice and serve.

Notes

Mushrooms and rice

Arrange the mushrooms in a single layer over the rice. If using large mushrooms about the size of a golf ball, the recipe notes that you can use up to 750 g (1.5 lb). A thicker mushroom layer may brown less and leave the rice softer.

Long-grain rice is recommended. Basmati and jasmine rice can also be used; medium- and short-grain rice will be stickier. Risotto and paella rice are not suitable.

For brown rice, leave the mushrooms off at first. Cover the pan with foil and bake for 30 minutes, then uncover, add the mushrooms and bake for a further 30–35 minutes until golden.

Serve 6–8 as a side dish.

About this recipe

Garlic-butter mushrooms bake over seasoned long-grain rice, letting their juices flavor the rice as it cooks. Finish with scallions and, if you like, a little extra butter.
