Instructions

Sauce

  1. Step 1: Heat the olive oil in a large saucepan over medium heat. Add the garlic and cook for 1 minute, until fragrant. Add the remaining sauce ingredients and stir. Adjust the heat to maintain a gentle simmer, about medium heat. Cook for 40 minutes, then puree with an immersion blender, or cool slightly and transfer to a blender.

  2. Step 2: Let the sauce cool completely before using it; hot sauce can make the pizza base soggy.

  1. Step 3: Top a flatbread with 2.5 tablespoons of sauce. Sprinkle a tiny amount of cheese over the base, keeping it away from the edges so it helps hold the toppings in place.

  2. Step 4: Sprinkle the onion, capsicum, salami, olives and mushrooms over the flatbread, then add the cheese. Repeat with the remaining flatbreads.

  3. Step 5: Stack the pizzas with paper between them. Wrap them in groups of about three, or in groups you can comfortably handle. Transfer them to a large airtight container or ziplock bag and freeze.

  4. Step 6: Baking:

Baking

  1. Step 7: Remove the oven shelf and clean it.

  2. Step 8: Preheat the oven to 240°C / 460°F for a standard oven, or 220°C / 430°F for a fan or convection oven.

  3. Step 9: Place a frozen pizza, or a freshly made unfrozen pizza, directly on the oven shelf. Bake for 10 minutes, or until the edges are golden and the base is crispy.

  4. Step 10: Cut and serve immediately.

Notes

You can use store-bought pizza sauce instead of the homemade sauce. For the melting cheese, Monterey Jack can be replaced with cheddar, tasty cheese or more mozzarella.

Freeze leftover sauce in a ziplock bag spread thinly so you can break off a portion. Defrost it, pour off any watery liquid on the surface, then use it.

About this recipe

Make a freezer batch of thin, crispy pizzas on Greek pita flatbreads, topped with homemade tomato sauce, salami, vegetables and two kinds of cheese. Bake them straight from frozen for a ready-to-eat meal.

Unbaked flatbread pizzas layered with paper between them in a stack.

Use thick Greek pita bread for the base; Lebanese bread is another option. Keep the sauce cool before adding it to the flatbreads so the bases do not turn soggy.
