Instructions
Chicken
Step 1: Cover the chicken with a plastic bag or cling wrap and pound it to an even thickness of 2 cm (4/5 inch). Sprinkle both sides generously with salt and pepper.
Step 2: Heat the oil and melt 1 tablespoon butter in a large skillet over high heat. Add the chicken and cook for 3 minutes, or until golden. Turn and cook the other side for 3 minutes. Transfer to a plate and cover loosely with foil.
Gravy
Step 3: Add 1 tablespoon butter to the skillet. Add the mushrooms and cook for 3 minutes, or until golden.
Step 4: Add the remaining 1 tablespoon butter and the garlic. Cook for 1 minute, until the mushrooms are golden.
Step 5: Lower the heat to medium. Add the flour and mix for 1 minute.
Step 6: Add about one-quarter of the beef broth, mixing as you go. Once incorporated, gradually add the remaining broth, mixing constantly to avoid lumps. Use a whisk if needed; it works with the mushrooms in the skillet too.
Step 7: Cook the gravy for about 2 minutes, or until it thickens to your taste. It will thicken more as it cools. Adjust the salt and pepper.
Step 8: If you like, return the chicken to the skillet and turn it to coat in the gravy.
Step 9: Place the chicken on serving plates and top with gravy. Serve with mashed potatoes or a similar side.
Notes
For chicken broth instead of beef broth, add 2 teaspoons Worcestershire sauce for extra flavor. The gravy will be paler than when made with beef broth.
For a lump-free method, remove the mushrooms before adding the second tablespoon of butter. Lower the heat to medium, add the butter and garlic, and once the butter melts, stir in the flour and cook for 1 minute. Gradually stir in the beef broth, whisking if needed. Return the mushrooms once the gravy has thickened.
For a gluten-free version, skip the flour. Mix 2.5 teaspoons cornstarch with the same amount of water in a small bowl, add the mixture with the beef broth, and simmer until thickened.
Chicken thighs also work in place of chicken breasts.
