Instructions
Step 1: Sprinkle both sides of the chicken with garlic powder, salt and pepper.
Step 2: Heat the oil in a large skillet over medium heat. Place the chicken in the skillet smooth side down.
Step 3: Press down lightly with a spatula. Cook for 5 minutes, until deep golden and crispy.
Step 4: Turn the chicken and press lightly with a spatula. Cook for 2 minutes. Add the garlic and butter, then cook for 1 minute, until the garlic is light golden and fragrant.
Step 5: Add the wine, then turn up the heat. Stir around the chicken to dissolve the golden bits stuck to the skillet into the wine. Simmer rapidly for 1 1/2 minutes, or until the alcohol smell evaporates.
Step 6: Remove from the heat. Serve the chicken with the sauce.
Notes
Chicken breast option
To use chicken breast, cut it in half horizontally to 1 cm (2/5 inch) thick. Heat the skillet over high heat, cook for 2 minutes, flip and cook for 1 minute, then add the garlic and butter and continue with the recipe.
