Instructions
Step 1: Preheat the oven to 180°C/350°F.
Step 2: Mix the filling ingredients together and set aside while you prepare the apples. The mixture will firm up and become scoopable; refrigerate it if the weather is very hot.
Step 3: Cut the apples in half through the core. Use an ice cream scoop, spoon, or small knife to scoop out the core.
Step 4: Arrange the apples snugly in a baking dish, leaving little space around them. Pile the filling onto the apples.

Step 5: Mix the cornflour with a splash of the water until dissolved, then stir in the remaining water. Pour the mixture around the apples.
Step 6: Cover with foil and bake for 20 minutes. Remove the foil and bake for a further 20 minutes, until the crumb is deep golden, the apples are tender but not too soft, and syrupy caramel has formed in the pan. The sauce thickens a little more as it is served.
Step 7: To serve, spoon the caramel sauce over the apples, top with ice cream, and serve with more sauce.

Notes
Make-ahead and sauce tips
To prepare ahead, rub the cut sides of the apples with lemon juice to prevent browning, add the filling, and refrigerate until ready to bake. You can leave them overnight, but pour the cornflour-water mixture around the apples just before baking, as the cornflour settles if left standing.
If the sauce is too thick, stir in a spoonful of hot water. If it is too thin, remove the apples, stir the sauce, and return the dish to the oven for a minute or two to thicken.
About this recipe
Juicy apples filled with a spiced nut and brown sugar mixture bake in a bubbling caramel sauce. Serve warm with ice cream.
Choose juicy apples so their juices help form the sauce. Red apples work well; Granny Smith apples add a little tang.
