Instructions
Step 1: Preheat the oven to 180°C / 350°F.
Step 2: Peel the apples, then cut them into 1.5 cm / 1/2-inch cubes.

Step 3: Place the apples in a bowl. Sprinkle with the flour, sugar, and cinnamon, then pour over the lemon juice. Toss, then spread evenly in a 1.5 litre / 1.5-quart baking dish.
Step 4: Place the topping ingredients in a bowl. Mix until clumps form, like wet sand. Spread over the apples, crumbling it with your fingers if needed to create a crumbly topping.

Step 5: Bake for 30 to 40 minutes, or until golden brown. Remove from the oven, cover loosely with foil to keep warm, and let stand for 10 minutes before serving so the apple syrup can thicken slightly.
Step 6: Serve warm with vanilla ice cream.
Notes
Granny Smith apples give the filling a tart edge; sweet red apples, pears, peaches, or berries can also be used. If using peaches, you can reduce the sugar slightly. Keep sugar in the filling so it becomes jammy.
To make ahead, prepare the recipe through the filling. Cover the topping and refrigerate it if the room is hot; add the topping just before baking.
For a less-sweet topping, reduce its brown sugar to as little as 1/2 cup. Keep the filling sugar as written.
