Instructions

  1. Step 1: Mix the cornflour with 1 tbsp water until lump-free. Add the remaining sauce ingredients and mix.

  2. Step 2: Heat the oil in a wok or large skillet over high heat. Add the garlic and ginger and stir briefly, then add the onion.

  3. Step 3: Cook for 1 minute, then add the pork. Cook until the pork turns white.

  4. Step 4: Add all the vegetables. Cook for 2 minutes, until the carrot is softened and the pork is cooked through.

  5. Step 5: Add the sauce and cook for 1 1/2 minutes, or until it thickens and turns glossy, coating the filling.

  6. Step 6: Transfer the filling to a serving bowl. Arrange the lettuce leaves, peanuts and scallions alongside.

  7. Step 7: To serve, spoon some filling into a lettuce leaf. Top with peanuts and scallions, bundle the leaf around the filling and enjoy.

Notes

Options and substitutions

  • Use chicken instead of pork, or replace the meat with 2 1/2 cups of chopped vegetables or chopped firm tofu.

  • Chinese cooking wine can be replaced with mirin or dry sherry. For a nonalcoholic option, use low-sodium chicken broth in place of the wine and water in the sauce.

  • You can replace dark soy sauce with more light soy sauce, or use ordinary soy sauce in place of both soy sauces; the filling will be lighter in color.

  • Butter lettuce or Bibb lettuce are soft alternatives to crisp iceberg lettuce.
