Equipment

  • Bowl
  • Large skillet

Instructions

  1. Step 1: Put the meatball ingredients in a bowl.

  2. Step 2: In a separate bowl, mix the cornflour with 1 tablespoon of the water until smooth. Add the soy sauce, sake, mirin, and sugar, then mix.

  3. Step 3: Add 2 teaspoons of the teriyaki sauce to the meatball mixture.

  4. Step 4: Add the remaining water to the sauce and mix. Set it aside.

  5. Step 5: Mix the meatball mixture with your hands. Measure out 1 heaped tablespoon at a time and roll into balls.

Tip: If the mixture is too sticky, see the ingredient notes for ways to make it easier to roll.

  6. Step 6: Heat the oil in a large skillet over medium-high heat. Add the meatballs and cook for 5 minutes, rolling them to brown all over. They will still be a little raw inside.

  7. Step 7: Turn the heat down. Quickly mix the sauce again, then add it to the pan. Bring to a simmer and cook for 2 to 3 minutes, or until the sauce thickens into a glossy coating on the meatballs.

  8. Step 8: Serve over rice, garnished with green onions and sesame seeds if desired.

Notes

Ingredient notes

  • For the soy sauce, use ordinary all-purpose soy sauce. A mix of equal parts light and dark soy sauce is another option; light soy sauce alone is also suitable.

  • Cooking sake can be replaced with Chinese cooking wine or dry sherry. Mirin is important to the teriyaki flavor, and no suitable substitute is offered.

  • If the chicken mixture is too wet to roll, refrigerate it for 30 minutes or lightly oil your hands. Add extra breadcrumbs only if needed.
