Ingredients
For 4 servings
Patties
For cooking
Yoghurt ranch sauce (optional)
Instructions
Step 1: Preheat the oven to 200°C/390°F. Line a baking tray with baking paper, or spray it with oil.
Step 2: Place the patty ingredients in a bowl and mix to combine.

Step 3: Measure out about 1/4 cup of the mixture and pat it into a fritter shape about 6 cm / 2.25 inches wide and 1 cm / 2/5 inch thick. The patties shrink a little and become thicker as they cook.
Step 4: Place the patties on the tray. Generously spray the tops with oil.

Step 5: Bake for 15 minutes, then flip the patties and spray them with oil again. Bake for a further 8–10 minutes, until golden on top. Serve immediately with the sauce.
Step 6: For the sauce, mix the ingredients together. Add salt and pepper to taste, then set aside for 20+ minutes.
Notes
Serve with ketchup, plain yoghurt, sour cream, or the yoghurt ranch sauce included here.
You can replace some of the broccoli with about 1.5 cups of extra vegetables, such as grated carrot or onion, corn, peas, finely sliced cabbage or spinach, or finely chopped cooked green beans or asparagus. Squeeze excess water from grated zucchini before adding it.

About this recipe
These cheesy chicken and broccoli patties bake until golden rather than being fried. Serve them as a meal with crusty bread and salad, or set them out as a starter with dipping sauce.

The mixture also works shaped into larger patties for burgers or into meatballs. The recipe makes about 15 fritters.
