Instructions
Step 1: Cook the noodles according to the packet directions. Drain, then briefly rinse under running water to stop them sticking together.
Step 2: Put the sauce ingredients in a bowl and mix until smooth. Briefly microwave the mixture if needed to help it come together.

Step 3: Put the noodles in a large bowl. Add the green onions, dressing, sesame seeds and peanuts, if using, and toss well. Garnish with more sesame seeds. Serve warm or at room temperature.
Notes
Ingredient options
Fresh egg noodles work well, but dried noodles or other types such as rice noodles or ramen can also be used. Very thin vermicelli or glass noodles are not recommended.
You can use all-purpose or light soy sauce, or a combination of either, in place of the dark soy sauce. Avoid using only dark soy sauce, which can dominate the flavor.
If you do not have Chinese sesame paste or tahini, use more peanut butter.
Use any chili sauce or paste you like, or substitute pepper or chili flakes for the garlic chili paste.
The noodles can be made well in advance of serving.
