Instructions

  1. Step 1: Taste the chilli crisp to check its heat. Laoganma is not especially spicy, and the amount is based on that level of heat. If yours is very spicy, start with less and add more later.

  2. Step 2: Mix the sesame oil, vinegar, soy sauce, sugar, salt and sesame paste in a bowl. Top with the green onion without mixing it in.

  3. Step 3: Heat the chilli crisp and its oil in a small pan over medium heat. Add the ginger and garlic and stir for 30 seconds, until golden. Pour the hot mixture over the green onion, then mix.

  4. Step 4: Cook the noodles according to the packet directions. Transfer them straight from the saucepan into the bowl, bringing some of the cooking water with them to loosen the sauce. Toss, adding more cooking water if needed. Toss through the coriander.

  5. Step 5: Taste and add more salt if needed, then add more chilli crisp if desired. Chilli crisp varies in saltiness and spiciness. Serve.

Notes

Substitutions and options

For the Chinese sesame paste, use Chinese sesame sauce, tahini or pure peanut butter; commercial peanut butter spread also works but has less flavour. Add an extra dash of sesame oil if substituting. Light soy sauce can be replaced with all-purpose soy sauce or half as much dark soy sauce. Use apple cider vinegar or another clear vinegar in place of rice vinegar, and use another sugar, honey or maple syrup instead of white sugar.

Use either instant or ramen noodles, or fresh noodles such as hokkien or lo mein. Other dried noodles, including rice or egg noodles, also work at the listed weight. Ginger, garlic and coriander are optional.

Chilli crisp varies in heat and saltiness. Start with less if yours is very spicy, and adjust the seasoning to taste.
