  2. Step 2: Cut the green onions into 5 cm (2-inch) lengths. Separate the white and pale green parts from the green parts.

  3. Step 3: Heat the vegetable oil in a large skillet over high heat. Add the mushrooms and cook for 3 minutes.

  4. Step 4: Add the garlic and sesame oil. Cook until the mushrooms and garlic are golden.

  7. Step 7: Add the water, then press the noodle cakes into it.

  8. Step 8: Cook for 45 seconds, then flip the noodle cakes. Cook for 30 seconds, then break up the noodles.

  9. Step 9: Add the green parts of the green onions and toss well. Add more water if needed to make the dish saucy.

Notes

Any type of instant noodles works; discard the seasoning packet. Extra-large ramen packets may be difficult to fit in the skillet, but you can break the noodle cakes if needed.

Use toasted or untoasted sesame oil. If you can’t find dark soy sauce, any soy sauce works, though the sauce will be lighter in color. Oyster sauce can be replaced with more hoisin sauce.

For a mirin substitute, use Chinese cooking wine or dry sherry. For a nonalcoholic option, use 1/2 cup water and 3/4 cup low-sodium chicken stock or broth in place of the 1 1/4 cups water, and omit the mirin.

If the noodles need longer than the packet’s cooking time, add a little more water.
