Parmesan Breadcrumb Topping
Equipment
- Broiler or oven grill
- Large, deep skillet or heatproof pot
- Bowl
- Whisk
Instructions
Step 1: Preheat the broiler or oven grill to high.
Step 2: Mix the breadcrumb topping ingredients together.
Step 3: Heat the oil and melt 1 tablespoon of the butter in a large, deep skillet or heatproof pot over high heat. Add the shrimp and sprinkle with pepper. Cook for 1 minute, then add the garlic and cook for another minute, until the shrimp have changed color but are not fully cooked. Transfer them to a bowl.
Step 4: Reduce the heat to medium and melt the remaining butter. Add the flour and cook for 1 minute. Slowly pour in the milk, stirring as you go. Once it is incorporated and smooth, using a whisk if needed, stir in the seasonings, then add the water.
Step 5: Once the liquid is hot, add the macaroni. Cook for 8 minutes, stirring regularly, until it is almost cooked through. Remove the pot from the heat.
Step 6: Stir in the cheeses, then add the shrimp. Taste and adjust the salt if needed. The mixture should still be saucy; the sauce will be absorbed and thicken more in the next step.
Step 7: Sprinkle the breadcrumb mixture over the top. Place the pot under the hot grill for 2–3 minutes, until the topping is golden.
Step 8: Sprinkle with parsley if desired and serve immediately.
Notes
For convenience, use frozen shrimp; thaw them completely and pat away excess water before cooking. Use large shrimp so they do not cook through too quickly.
Full-fat milk is preferred, but low-fat milk can also be used. Grate the cheese fresh for a silky sauce. The cheddar or Gruyère can be replaced with another melting cheese; mozzarella can also be swapped for a melting cheese of your choice.
