Instructions

  1. Step 1: Cook the noodles in a large saucepan according to the packet directions. Scoop out about 1/2 cup of the cooking water. Strain the noodles and set aside.

  2. Step 2: Melt the butter in the same saucepan over medium heat. Add the garlic and cook, stirring, until soft. Add the oyster sauce, fish sauce, seasoning sauce and 1/4 cup cooking water. Stir to combine.

A sequence of sauce being stirred in a saucepan, followed by noodles, Parmesan and green onion being added.
  3. Step 3: Add the cooked noodles, Parmesan and green onion. Toss until the noodles are coated and the sauce is no longer pooled at the bottom of the saucepan. If needed, add more cooking water 1 tablespoon at a time to loosen the noodles.

  4. Step 4: Serve immediately.

  5. Step 5: For a meal, serve with a fried egg and broccolini cooked with the noodles, tossed with Asian Sesame Dressing. Broccolini takes about 3 minutes to cook; add it to the water before, after or with the noodles, depending on the noodles’ cooking time.

Notes

Variations and storage

  • Fresh egg noodles, including hokkien or lo mein, can replace the ramen; use 220 g (8 oz). Dried egg noodles, angel hair pasta, spaghetti or rice noodles can also be used. Use the recipe amount for dried egg noodles or pasta. The texture will vary with the noodle type.

  • Light or all-purpose soy sauce can replace either the fish sauce or Maggi seasoning; avoid dark soy sauce. Replacing both sauces with soy sauce will reduce the dish’s savory flavor. Vegetarian oyster sauce can replace regular oyster sauce.

  • Refrigerate leftovers for up to 3 days. Loosen them with a little water before serving.
