Equipment

  • Grill or broiler
  • Barbecue grill
  • Griddle skillet
  • Measuring teaspoon
  • Bowl
  • Toaster

Instructions

Prepare the grill

  1. Step 1: Preheat the grill or broiler to high. Alternatively, use the grill side of a barbecue or a griddle skillet.

Tomato Topping

  1. Step 2: If desired, cut the tomatoes in half and use a measuring teaspoon to scoop out the watery seeds. Save them for another use. Dice the tomatoes into 1 cm pieces.

    Tip: Deseeding is optional.

  2. Step 3: Put the tomatoes and the remaining topping ingredients in a bowl and gently toss to combine. Set aside for 5 to 10 minutes so the flavours meld and the tomatoes become juicy and soften slightly.

Bread

  1. Step 4: Brush both sides of each slice of bread with oil. Grill or broil until golden and crisp, about 3 minutes per side. Alternatively, toast the bread and then brush it with oil.

  2. Step 5: Lightly rub one side of the bread with the garlic.

A hand rubs garlic over toasted bread; a loaf of crusty bread is shown beside it.

Tip: Rub the garlic over the hot toast.

Assemble

  1. Step 6: Pile the topping and some of its juices onto the bread. Drizzle with more extra virgin olive oil and serve immediately.

Notes

Make-ahead and serving

The tomato topping can be prepared a few hours ahead. Leave out the salt until just before serving so the tomatoes do not release extra moisture.

For a DIY spread, set out bowls of topping and grilled bread so everyone can assemble their own bruschetta.
