Equipment

  • Paper towels
  • Serving plate
  • Nonstick pan
  • Spatula
  • Butter knife

Instructions

  1. Step 1: Cut the halloumi into slices 1–1.25 cm (0.4–0.5 inches) thick. Lay them on paper towels and pat the surface dry.

Tip: Blot away surface moisture without pressing hard. Cut across the short edge of the block so the slices are less likely to split.

  2. Step 2: Warm a serving plate.

Tip: A warm plate helps keep the halloumi warm a little longer.

  3. Step 3: Heat the olive oil in a nonstick pan over medium-high heat.

  4. Step 4: Carefully place the halloumi in the pan. Cook for 1½ minutes, or until the underside is golden. Move the slices if needed so they cook evenly.

Tip: Avoid crowding the pan, or the halloumi may braise instead of turning golden.

  5. Step 5: Turn the slices gently and cook the other side for about 1–1½ minutes, until golden.

Tip: Use a spatula and a butter knife to guide the slices if helpful.

  6. Step 6: Transfer the halloumi to the serving plate.

  7. Step 7: Working quickly, drizzle with honey and sprinkle with thyme and chilli flakes, if using. Drizzle some slices lightly and cover others more generously, as desired.

  8. Step 8: Serve immediately, while the surface is crisp and the inside is soft. Honey on the plate is good for mopping up with bread.

Notes

For a different finish, the thyme can be replaced with white sesame seeds, roughly chopped toasted walnuts, or pistachios. Leftovers keep in the fridge for 3–4 days, though they become firm; reheating softens them, but the texture is not the same as freshly cooked.
