Instructions
Step 1: Place all the dip ingredients except the olive oil in a food processor. Blitz on high for 10 seconds or until fairly smooth, scraping down the sides once. A stick blender can also be used; a stand mixer will not work.

Step 2: With the motor running, slowly pour the olive oil through the feeder. Blitz until the dip is smooth and creamy, scraping down the sides as needed.
Step 3: Spread the dip on a shallow bowl-plate or regular plate until it is about 1.5 cm / 0.6 inches thick. Use the back of a spoon to make swirls where the honey and oil can pool.

Step 4: Drizzle with the honey and olive oil. Sprinkle with pistachios, parsley, chilli and lemon zest. Serve immediately with your choice of dippers.
Notes
The dip can be kept in the fridge for up to 3 days without toppings. Add the toppings just before serving; the dip may start to perspire after about 30 minutes once topped.
Cream cheese can be replaced with 1/3 cup yogurt or sour cream. Maple syrup can replace the honey, and other nuts, seeds, dried fruit, olives, sun-dried tomatoes, artichokes or pickled vegetables can be used as toppings.
Danish feta blends especially smoothly. Crumbly Greek feta can also be used, but the dip may remain faintly grainy unless strained.
About this recipe
This smooth feta dip comes together in minutes in a food processor. Finish it with honey, olive oil, pistachios and herbs, then serve it with bread, crackers or crisp vegetables.
For dipping, choose thick slices of warmed bread, pita or flatbread wedges, crackers, or vegetable sticks.
