Equipment

  • Oven
  • Small, shallow ovenproof dish
  • Parchment paper
  • Serving plate or board
  • Knife
  • Cheese or pâté knife

Instructions

  1. Step 1: Preheat the oven to 180°C/350°F.

  2. Step 2: Unwrap the brie and place it in a small, shallow ovenproof dish slightly larger than the cheese, which can also be used for serving. Alternatively, place it on a piece of crumpled baking or parchment paper to make it easier to transfer.

  3. Step 3: Oven method: Bake for 15 to 20 minutes for a 250g brie, or until melted through. For a 500g brie, increase the baking time to 25 minutes. To check, gently touch the centre; it should feel very soft, as if it is about to collapse if pressed any harder.

  4. Step 4: Microwave method: Microwave on high for 2 minutes, in 30-second increments.

  5. Step 5: Carefully transfer the brie to a serving plate or board; it is delicate. If you used parchment, transfer it on the paper.

  6. Step 6: Drizzle with honey and top with a sprig of thyme, if using.

  7. Step 7: Serve immediately with crostini for scooping. Provide a knife to cut through the rind and a cheese knife, pâté knife, or similar knife to scoop the cheese onto crostini or crackers, plain or fruit-and-nut flavoured.

Notes

An economical brie or camembert works well here. In a ceramic dish, the melted cheese stays scoopable for about 15 minutes; on parchment, it stays scoopable for about 10 minutes, then can be spread with a knife for about 10 more minutes.

Reheat leftover brie in the microwave; use 2 minutes as a baseline for a whole brie.
