Equipment

  • Oven
  • Mixing bowl
  • Rubber spatula or wooden spoon
  • Rolling pin
  • Cutting board
  • Baking paper
  • Baking trays
  • Pizza cutter or knife

Instructions

  1. Step 1: Preheat the oven to 200°C / 400°F (180°C fan-forced).

  2. Step 2: Mix the flour, sesame and salt in a bowl using a rubber spatula or wooden spoon. Make a well in the centre, then add the water and oil. Use the handle of the spatula to mix until the flour is incorporated.

A spoon stirs dry ingredients with oil in a bowl, then mixes the dough.
  3. Step 3: Lightly flour the counter. Scrape the dough onto it and knead a few times to bring it together into a ball. Cut the dough in half. Roll one piece into a thin oval about 3 mm / 1/8 inch thick.

Hands shape the dough into a ball and cut it in half.

Tip: Use a little extra flour as needed to stop the dough sticking to the counter or rolling pin.

  4. Step 4: Place a sheet of baking paper on a cutting board and transfer the rolled dough onto it. Sprinkle with half the sesame seeds and half the salt flakes. Roll the dough thinner on the paper, to about 2 mm / 1/12 inch.

Dough is rolled thin, with sesame seeds sprinkled over its surface.

Tip: Thinner dough makes crispier crackers.

  5. Step 5: Cut the dough into 5 cm / 2 inch squares using a pizza cutter or knife. The pieces around the edges and corners will be smaller. Leave the cut pieces in place, slide the paper onto a tray, and repeat with the other piece of dough.

Thin dough is scored into cracker shapes with a cutter.

Tip: If using a knife, cut straight up and down rather than dragging it through the dough.

  6. Step 6: Spray the crackers with oil. Bake both trays together for 12 minutes, then remove them from the oven. Move the more golden crackers from the outer edge of each tray to the centre so they cook evenly. Bake for another 8 to 10 minutes, or until all the pieces are light golden.

Crackers on a baking tray are rearranged and shown baked golden.

Tip: Smaller and thinner pieces brown faster. Keep an eye on the crackers during the last few minutes.

  7. Step 7: Remove the crackers from the oven and leave them to cool on the trays for about 20 minutes. Serve with a dip or prepare a cheese platter.

Notes

Variations and storage

  • For wholemeal flour, add a little extra water because it absorbs more liquid.

  • If you don’t have salt flakes, use a slightly heaped 1/4 teaspoon cooking or kosher salt, or 1/8 teaspoon levelled table salt, for the whole recipe. If using table salt in place of the cooking salt in the dough, use half the listed amount.

  • If you don’t have olive oil spray, lightly brush the dough with extra virgin olive oil before cutting.

  • Store the crackers in an airtight container. They stay crisp for 3 to 4 days; if they soften, return them to the oven to crisp up again.
