Instructions

  1. Step 1: Stir together the dark soy sauce, oyster sauce, Hoisin sauce and mirin.

  2. Step 2: Heat the oils in a medium skillet over high heat. Add the onion and garlic and cook for 1 1/2 minutes, until starting to turn golden.

  3. Step 3: Add the beef and cook, breaking it up as you go, until it changes from pink to light brown.

  4. Step 4: Add the sauce and cook for 2 to 3 minutes, until the beef is well caramelised.

  5. Step 5: Push the beef to one side to make room for the noodles. Add the water, then place the noodles in the water.

  6. Step 6: Leave for 45 seconds, then turn the noodles. Leave for 30 seconds, untangle them, then toss them through the beef.

  7. Step 7: Add the bean sprouts and toss for 1 minute, or until the sauce reduces to coat the noodles and the noodles are cooked. Add a little more water if the noodles need longer.

  8. Step 8: Serve immediately, garnished with green onions and sesame seeds.

Notes

Substitutions

Use fresh or dried rice or wheat noodles instead of instant noodles; prepare them according to the package directions. Chicken, turkey, pork, lamb, kangaroo or veal can replace the beef. You can use Hoisin sauce instead of oyster sauce, or oyster sauce instead of the Hoisin sauce. If you don’t have dark soy sauce, another soy sauce works, though the sauce will be lighter in colour.

Finely sliced cabbage, matchstick-cut carrots, spinach or kale can stand in for the bean sprouts. Mirin can be replaced with Chinese cooking wine or dry sherry.

Let the beef caramelise well for the best flavour. The noodles cook quickly, so keep an eye on them as they soften.
