Equipment

  • Oven
  • Baking tray
  • Aluminum foil
  • Parchment paper
  • Rolling pin
  • Meat mallet
  • Meat thermometer

Instructions

  1. Step 1: Preheat the oven to 425°F/220°C (200°C fan).

  2. Step 2: Pound the chicken to 1.5 cm/0.6 in thick at the thickest part, using a rolling pin, meat mallet or your fist. This helps the chicken cook evenly and tenderizes it.

  3. Step 3: Mix the seasoning.

  4. Step 4: Line a tray with foil and baking or parchment paper. Place the chicken upside down on the tray. Drizzle with about 1 tsp oil and rub it over with your fingers. Sprinkle with seasoning.

  5. Step 5: Flip the chicken. Drizzle with 1 tsp oil, rub it over with your fingers and sprinkle with seasoning, covering as much of the surface as possible.

  6. Step 6: Bake for 18 minutes, or until the surface is golden, or the internal temperature reaches 165°F/75°C on a meat thermometer.

Seasoned chicken breasts browned on a lined baking tray.
  7. Step 7: Remove the chicken from the oven and immediately transfer it to serving plates.

  8. Step 8: Wait 3–5 minutes before serving. Garnish with freshly chopped parsley if desired.

Notes

Ingredient variations

  • For chicken breasts larger than about 250 g/8 oz each, cut them horizontally into two thin steaks and skip pounding. Keep them no thicker than 1.5 cm/0.6 in at the thickest point; pound thicker pieces with your fist.

  • Boneless, skinless thigh fillets can be used instead. Bake small or medium thighs for 25 minutes and larger thighs for 30 minutes.
