Equipment

  • Oven
  • Pan
  • Grill or broiler

Instructions

  1. Step 1: Preheat the oven to 220°C/420°F (200°C fan).

  2. Step 2: Choose a pan large enough for the thighs to lie flat without bunching or folding. Line the pan with foil and place the thighs in it.

  3. Step 3: Mix the glaze ingredients together. Spoon about two-thirds of the glaze over the top surface of each thigh, not the underside. Reserve the rest.

  4. Step 4: Bake for 15 minutes, then remove the pan.

  5. Step 5: Set the grill or broiler to high and adjust the shelf to 20 cm (8 inches) from the heat source.

  6. Step 6: Spoon the pan juices over the chicken, then spoon or dab the remaining glaze onto the chicken.

  7. Step 7: Broil for 8 to 10 minutes, until the surface is nicely caramelized.

  8. Step 8: Remove the chicken and let it stand uncovered for a few minutes before serving with the pan juices.

Notes

For the glaze, ketchup can be replaced with tomato sauce or barbecue sauce; brown sugar can be replaced with white sugar, or with 2 tablespoons honey or maple syrup. Use light or all-purpose soy sauce, not dark soy sauce. Line the pan with foil because the glaze can stick firmly; do not use parchment paper under the broiler.
