Instructions
Step 1: Preheat the oven to 200°C/390°F (180°C fan).
Step 2: Line a baking dish with foil, then baking paper. Choose a dish that fits the chicken comfortably: if the pieces are too spread out, the glaze may dry out; if they are too snug, the glaze may not thicken enough.
Step 3: Mix the glaze ingredients together.
Step 4: Place the onion and chicken in the baking dish, with the chicken skin side down. Pour the glaze over the chicken.
Step 5: Bake for 25 minutes, then turn the chicken and bake for a further 25 to 35 minutes, until browned and the glaze is sticky. If the glaze is not syrupy, transfer the chicken to a plate and return the pan to the oven for a few minutes; the glaze will reduce quickly.
Step 6: Turn the chicken in the glaze to coat it, then spoon the glaze over the pieces.
Step 7: Serve with rice and steamed greens, sprinkled with sesame seeds and fresh coriander or cilantro leaves.
Notes
Ingredient notes
Use ordinary all-purpose soy sauce or light soy sauce. Dark soy sauce and sweet soy sauce are not recommended.
Drumsticks can be used instead of bone-in, skin-on chicken thighs without changing the recipe.
Do not double the recipe or sauce; the glaze may not reduce to a sticky consistency.
About this recipe
Mix honey, soy sauce, garlic, vinegar, sesame oil and pepper for a simple glaze, then bake it with chicken and red onion. The glaze reduces as the chicken cooks, coating it in a sticky sweet-salty sauce.

Serve with rice and steamed greens, and finish with sesame seeds and fresh coriander or cilantro.
