Instructions

Oven-Baked BBQ Chicken

  1. Step 1: Preheat the oven to 200°C/390°F.

  2. Step 2: Mix the sauce ingredients in a ceramic or glass baking dish, then stir in the water.

  3. Step 3: Add the chicken and turn to coat. Arrange it skin-side down.

  4. Step 4: Bake for 20 minutes. Remove the dish from the oven, turn the chicken and spoon sauce over it.

  5. Step 5: Bake for a further 30 minutes. Remove the dish and spoon sauce over the chicken.

A spoon pours barbecue sauce over a piece of baked chicken.
  6. Step 6: If desired, tilt the pan and spoon or drain off excess fat.

  7. Step 7: Set the broiler or grill to high. Spoon sauce generously over the chicken, then place it under the broiler or grill for 2 to 3 minutes, until the chicken is caramelized and the sauce has thickened. Watch closely; this can happen quickly.

  8. Step 8: Serve the chicken garnished with parsley or green onions, if using.

Serving ideas

  1. Step 9: Serve with cornbread, coleslaw, potato salad, lemon potato salad, Southern baked beans, leafy salad with vinaigrette, steamed corn with butter, bread rolls, mashed potatoes, cauliflower mash or potato and gravy.

Notes

For the sauce, ketchup can be replaced with Australian or UK tomato sauce. Cider vinegar can be replaced with white wine, sherry or champagne vinegar, or 2 tablespoons of white vinegar. Onion powder can be replaced with garlic powder or 1 finely minced garlic clove.

A glass or ceramic baking dish is recommended. If using a metal pan, line it with foil and parchment paper. Sauce thickness varies; add a splash of water if it is too thick, or return the pan to the oven briefly if it is too thin.

Bone-in, skin-on chicken pieces are recommended. Boneless thighs or breast can also be used: omit the water and use 1 kg / 2 lb chicken, following the baking and basting approach described for sticky baked chicken thighs.
