Instructions
Step 1: Preheat the oven to 200°C/390°F (180°C fan-forced).
Step 2: Sprinkle the chicken generously with salt, pepper, and thyme. Toss to coat.
Step 3: Spread the pasta in a 23 x 33 cm / 9 x 13-inch baking dish. Sprinkle the flour evenly over the surface, avoiding clumps so it dissolves. Pour in the milk and broth, add the garlic and butter, and stir.
Step 4: Spread the chicken over the pasta, then add the broccoli.
Step 5: Cover with foil and bake for 15 minutes, or 20 minutes if the milk and broth were cold.
Step 6: Remove the foil and stir well. Add most of the cheese and stir well again. Top with the remaining cheese.
Step 7: Return the dish to the oven and bake for 15–20 minutes, until the top is golden and the sauce has thickened.
Step 8: Let stand for a few minutes, then serve immediately.
Notes
Notes
Spiral pasta helps keep the flour from getting caught inside the pasta. For penne, ziti, or macaroni, mix the flour with a splash of milk until smooth, then mix in the remaining milk before adding it to the dish.
Cut broccoli into small florets so it cooks through. For softer broccoli, cut it into smaller florets. Thaw frozen broccoli and drain off excess water before using.
Cheddar or Colby works well; another flavored cheese that melts can also be used.
Oven strength affects cooking. If the pasta is undercooked, the chicken is not done, or the sauce is watery, continue baking. If the top browns too much, cover the dish with foil or a tray and return it to the oven.
Refrigerated leftovers reheat well. Freezing is not ideal because the sauce may look split after reheating, though it will still taste good.
