Instructions
Meatballs
Step 1: Preheat the oven to 200°C/390°F for a standard oven, or 180°C/350°F for a fan or convection oven.
Step 2: Place a rack on a tray and spray the rack with oil.
Step 3: Put the meatball ingredients in a bowl and mix well. Scoop up a heaped tablespoon of mixture, roll it into a ball, and place it on the rack. Repeat with the remaining mixture; it should make 25–30 meatballs. Spray your hands with oil or wet them lightly with water to help with rolling.

Step 4: Spray each ball well with oil, then bake for 25 minutes, until golden brown.
Tip: The meatballs should be soft inside.
Sauce
Step 5: Heat the oil in a large skillet over medium-high heat. Add the garlic and onion and cook for 2–3 minutes, until translucent. Add the tomato and water and stir, then turn the heat down to medium. Simmer for 5–10 minutes, season to taste with salt and pepper, and stir through the basil or dried herbs.

Step 6: Cook the pasta in a large pot of boiling water. Drain it, then return it to the same pot.
Step 7: Add the sauce and meatballs and toss.
Step 8: Serve garnished with fresh basil and Parmesan.
Notes
If the chicken mince has pools of water, choose a drier package. For a very wet meatball mixture, add a little more breadcrumbs or refrigerate it for 30 minutes to firm it up. For butcher-bought mince, ask for thigh rather than breast.
