Instructions
Sear chicken
Step 1: Melt the butter in a large pot over high heat. Add the chicken and sprinkle with a pinch of salt and pepper. Cook for 1 1/2 minutes, until golden.

Step 2: Turn the chicken and sprinkle with salt and pepper. Cook for 1 minute, until golden, then transfer to a plate. It does not need to be fully cooked through; it will cook more in the oven.
Step 3: Rest for 5 minutes, then chop into small pieces or shred.

Sauce and pasta
Step 4: Preheat the oven to 160°C / 325°F.
Step 5: Melt the butter over high heat in the same pot. Add the mushrooms and cook for 4 minutes, until they start to soften but are not yet golden.

Step 6: Add the garlic and onion and cook for 3 minutes, until the mushrooms are golden. Halfway through, add a pinch of salt and pepper.
Step 7: Turn the heat down to medium. Add the flour and stir for 30 seconds. Add the milk and stir for 10 seconds, or until it thickens.
Step 8: Add the chicken stock, cream, salt and pepper. Stir, then let the mixture heat, stirring occasionally so it does not catch on the bottom of the pot. Cook until the sauce thickens enough to leave a line briefly when drawn across the back of a spoon. Do not make it very thick; it will thicken more in the next steps.

Step 9: Turn off the heat. Stir in half the cheese, then add the pasta and chicken. Toss to combine, taste, and add more salt if needed.

Step 10: Pour the mixture into a 23 x 33 cm / 9 x 13-inch baking dish and smooth the surface. Top with the remaining cheese. Bake for 25 minutes, until golden and bubbling. Serve immediately.
Notes
Ingredient options
Long pasta works well, and penne, macaroni or ziti are also suitable. Avoid tiny pasta such as orzo, risoni, ditalini or tiny shells. Chicken breast or tenderloin can replace the thighs. For the sauce, margarine can replace butter; more milk can replace the cream; and any type of milk can be used. Up to 1 1/2 cups of the milk can be replaced with water.
For a gluten-free version, use gluten-free pasta and flour. To replace the flour with cornstarch, mix 3 1/2 tablespoons cornstarch with a splash of water and add it with the milk. The stock can be replaced with water and 2 stock cubes. If using stock powder instead, use 4 teaspoons. The cheese can be replaced with 3/4 cup (75 g) shredded Parmesan, or 1 to 1 1/2 teaspoons chicken stock powder.
Make ahead and storage
For make-ahead assembly, toss hot pasta with a dab of butter or a drizzle of oil, then let it cool. Make the sauce and let it cool, then combine it with the pasta and assemble the bake. Refrigerate for up to 4 days or freeze for up to 3 months. Thaw before baking for 40 minutes, loosely covered with foil; remove the foil for the final 10 minutes. To bake from frozen, cover with foil and bake for 50 minutes or until piping hot in the centre, then uncover and bake until the cheese has golden spots.
Store leftovers in the refrigerator for up to 4 days and reheat in the microwave.

About this recipe
Chicken tetrazzini brings seared chicken, mushrooms and pasta together in a creamy cheese sauce, then bakes until golden and bubbling.

The sauce thickens in the pot before the pasta and chicken are added. Use the back-of-the-spoon test: draw a line through the sauce and it should hold briefly before filling in.
