Notes
Optional flavour variations
For a Mexican or Southwestern flavour, use lime instead of lemon and add 1/4 cup coriander/cilantro leaves, 1.5 tablespoons chopped red onion and 1/4 teaspoon cumin powder.
For fresh herbs, add 1/4 cup chopped parsley, dill, coriander/cilantro or chives, in any combination. Or add 1.5 tablespoons each of coriander and cilantro.
For ranch flavour, add 1/4 teaspoon each of dried dill, parsley, chives, onion powder, garlic powder, salt and black pepper, plus 1/2 teaspoon white sugar.
For extra lemon flavour, add the zest of 1 lemon. For Greek flavour, add 2 teaspoons dried oregano and a squeeze of extra lemon. For Italian flavour, add 1.5 teaspoons mixed dried Italian herbs, or a combination of parsley, oregano, red pepper and basil.
Alternatively, add 1.5 teaspoons of a dried herb mix of your choice.
Storage
Keep the dressing in the refrigerator for up to 3 days. For storage up to 5 days, leave out the fresh garlic or replace it with 1/4 teaspoon dried garlic powder.
