Equipment

  • 20 cm / 8-inch square pan
  • Baking parchment
  • Bowl
  • Wooden spoon

Instructions

  1. Step 1: Preheat the oven to 180°C/350.

  2. Step 2: Grease a 20 cm / 8-inch square pan and line it with baking parchment, leaving an overhang so the bars can be lifted out once cooked.

  3. Step 3: Mix the butter, flour, sugar, baking powder and salt until no white bits of flour are visible.

  4. Step 4: Add the egg and mix.

  5. Step 5: Lightly press two-thirds of the mixture into the bottom of the pan.

  6. Step 6: Bake for 15 minutes, until slightly golden. Remove from the oven and cool for 5 minutes.

  7. Step 7: While the base is baking, mix the apple filling ingredients together in a bowl.

Crumble topping

  1. Step 8: Add the oats to the reserved crumble mixture. Mix with a wooden spoon or your fingers until the oats are mostly incorporated into the dough.

Assemble

  1. Step 9: Spread the apple filling over the base, then crumble the topping evenly over it with your hands.

  2. Step 10: Bake for 30–35 minutes, or until the top is deep golden.

  3. Step 11: Remove from the oven and let the bars cool in the pan. Lift them out using the baking paper.

  4. Step 12: Cut and serve. Eat the bars by hand or serve them on plates with ice cream and salted caramel sauce.

Notes

Use traditional rolled oats, not quick, instant or steel-cut oats.

Store the bars in an airtight container for up to 4 days, or up to 5 days. Refrigerate them if the weather is hot. The topping softens within 24 hours; to crisp it again, place the bars under the grill or broiler for a few minutes.

About this recipe

These apple crumble bars have a buttery shortbread-style base, a juicy cinnamon apple layer and a crisp, crumbly topping. The base and topping start with the same mixture.

Granny Smith apples bring a tart note and hold their shape as they cook. The bars can also be made with other apples; very sweet red apples may need less sugar.
