Instructions

  1. Step 1: Combine the sauce ingredients in a small bowl and mix.

  2. Step 2: Place the rice vermicelli noodles in a large bowl filled with boiled water and soak according to the packet instructions. Drain and set aside.

  3. Step 3: Heat 1 tablespoon of oil in a wok or heavy-based frying pan over medium heat. Add the shrimp and cook until just cooked, about 2 1/2 to 3 minutes. Remove and set aside.

  4. Step 4: Add the egg and spread it out to make a thin omelette. Once set, use a spatula to roll it up. Remove it from the wok and slice it while still rolled up.

  5. Step 5: Return the wok to medium heat and add the remaining 1 tablespoon of oil. Add the garlic, ginger and onion; cook for 2 minutes until the onion is slightly softened.

  6. Step 6: Add the capsicum and cook for 1 minute.

  7. Step 7: Add the noodles and sauce and toss a few times. Add the egg, pork, shrimp and chillies, if using. Toss until the sauce coats all the noodles and everything is heated through, about 1 to 2 minutes.

  8. Step 8: Serve immediately.

Notes

For the Chinese cooking wine, substitute dry sherry, cooking sake or mirin. If you can’t consume alcohol, use chicken broth.

If you don’t have Chinese barbecue pork, substitute diced chicken, bacon or ham, leave it out, or add more vegetables. For a quick Char Siu option, marinate pork chops for 20 minutes, then pan-fry over medium heat until caramelised or bake at 180°C/350°F for around 20 minutes.

Use all-purpose or light soy sauce; dark soy sauce has a flavour that is too intense for this dish. Any generic curry powder works, hot or ordinary.
