Instructions

  1. Step 1: To tenderize the chicken (optional), place the chicken and baking soda in a bowl and mix with your fingers. Set aside for 20 minutes. Rinse well in a colander, shake off excess water, then roughly pat dry with a paper towel.

  2. Step 2: Place all the sauce ingredients except the water in a bowl and mix. Microwave briefly if needed to melt the peanut butter. Add the water and mix.

  3. Step 3: Prepare the noodles according to the packet directions, usually by soaking them in boiled water. Drain and set aside.

  4. Step 4: Heat the oil in a large skillet or wok over high heat. Add the garlic and onion and stir for 30 seconds.

  5. Step 5: Add the chicken and cook until the outside changes from pink to white. Add the carrot and cabbage and cook until they start to wilt.

  6. Step 6: Add the noodles, bean sprouts and sauce. Toss for 1 1/2–2 minutes, or until the sauce thickens and coats the noodles.

  7. Step 7: Serve immediately, garnished with coriander and peanuts.

Notes

Regular sandwich-style peanut butter works well. If using unsweetened peanut butter, you may want to add a little sugar; pure peanut spread may need a little oil to loosen it.

You can substitute regular soy sauce for dark soy sauce. For fresh noodles, use 180–200 g (6–7 oz) of egg or rice noodles.

The baking-soda tenderizing method can be used with chicken breast or other chicken cuts. The recipe notes also mention pork as an option for this method.

About this recipe

Rice noodles, chicken and shredded vegetables come together in a peanut sauce flavored with curry, ginger and soy. Toss everything in a hot pan for a quick, satisfying stir-fry.

The sauce is mixed separately before it goes into the pan, so it coats the noodles and vegetables as they finish cooking.
