Instructions
Peanut sauce
Step 1: Place all the ingredients except the water in a bowl and mix to combine. Add the water and mix again.

Stir-fry
Step 2: Heat the oil in a skillet or wok over high heat. Add the garlic and sliced onion. Cook for 1 minute.
Step 3: Add your choice of protein or sliced tofu. Cook for 2 minutes, until just cooked.
Step 4: Add the vegetables in order of cooking time, starting with those that take longest. Cook briefly, until just cooked but still crisp.
Step 5: Add delicate vegetables, such as bean sprouts, spinach, and other leafy greens, along with the sauce. Toss until the sauce thickens, adding extra water if needed.
Step 6: If using, garnish with peanuts and coriander. Serve over rice, or with cauliflower rice.
Noodles
Step 7: Follow the stir-fry directions, adding the noodles with the sauce at step 4.
Step 8: Toss for 1–2 minutes, until the sauce thickens and coats the noodles. Remove from the heat, garnish, and serve immediately.
Notes
Regular sandwich-style or unsweetened peanut butter works. Dark soy sauce gives the sauce a deeper color, but regular soy sauce can be used instead.
The sauce keeps for 3–5 days. If keeping it for longer than 3 days, leave out the garlic and ginger and add them when using.
