Instructions

  1. Step 1: Mix the sauce ingredients, except the water, together in a small bowl. Then mix in the water; adding it afterward makes the sauce easier to combine.

  2. Step 2: Place the beef in a bowl and add 1 tbsp of the sauce. Mix and set aside for 10 minutes.

  3. Step 3: Heat the oil in a wok or large, heavy-based skillet over high heat. Add the garlic and stir until golden, about 10 seconds, then add the onion. Cook for 1 minute.

  4. Step 4: Add the beef and cook for 1 1/2 minutes, or until it is mostly brown; a few red spots are fine. If using pork, chicken or prawns, cook until almost cooked through.

  5. Step 5: Add the carrots, bean sprouts and sauce. Cook until the vegetables are wilted.

  6. Step 6: Add the peanuts and shallots, then stir.

  7. Step 7: Serve immediately with rice or noodles. Garnish with extra shallots and peanuts if desired. Cauliflower rice is also suggested as a low-carb, low-calorie option.

Notes

Variations

  • Replace some or all of the fish sauce with light or all-purpose soy sauce; avoid dark or sweet soy sauce.

  • For fish, choose a sturdy variety cut into cubes, or cook it separately and serve it over the satay vegetables.

  • To make stir-fried noodles, double the sauce and add about 350 g (12 oz) fresh noodles or 200 g (7 oz) dried noodles, rehydrated or cooked according to the packet. Toss the noodles with the sauce.

  • Finely chopped garlic works well in a stir-fry. If using garlic from a jar or a mincer, add it with the onion so it is less likely to burn.
