Instructions

  1. Step 1: Cook the pasta in a large pot of boiling water for the time on the packet minus 2 minutes. Just before draining, scoop out a mugful of pasta cooking water.

  2. Step 2: Melt the butter in a large skillet over medium heat. Add the garlic and onion and cook until translucent, about 2 minutes.

  3. Step 3: Add the remaining ingredients. Stir until the Parmesan has melted, then turn the heat up slightly and simmer for 2 minutes. Adjust the salt to taste.

  4. Step 4: Add the pasta and toss for 1 to 2 minutes, or until the sauce thickens and clings to the pasta rather than pooling in the skillet. If the sauce gets too thick, use some of the reserved pasta water to thin it.

  5. Step 5: Serve immediately, garnished with more Parmesan and parsley if desired.

Notes

Ingredient notes and variations

Tomato passata can be replaced with tomato puree. Canned tomato sauce or your favorite tomato pasta sauce can also be used in the same amount. If using a 400 g can of crushed or finely diced tomatoes, cook it down for 5 minutes before adding the milk and cream.

For a cream-free version, use milk and add extra butter for richness. Evaporated milk is another suggested substitute. Finely grate the Parmesan; pre-grated Parmesan may not melt smoothly into the sauce.

Stock powder adds flavor; if you do not have it, the recipe notes suggest adding an extra 1/4 to 1/2 cup Parmesan. Suggested add-ins include shrimp, bacon, pancetta, chicken, turkey, capsicum, mushrooms, spinach and zucchini. Avoid adding so much that there is not enough sauce.
