Equipment

  • Dutch oven
  • Large deep skillet

Instructions

  1. Step 1: Heat the oil in a Dutch oven or large deep skillet over medium-high heat.

  2. Step 2: Add the onion and garlic and cook for 1 minute.

  3. Step 3: Add the celery and carrot and cook for 3 minutes, until soft.

  4. Step 4: Increase the heat to high and add the beef. Cook for 3 minutes, breaking it up as it cooks, until no longer pink.

  5. Step 5: Add the remaining ingredients except the cheeses and stir to combine. Add the macaroni, then reduce the heat to medium or medium-low so the mixture simmers gently.

  6. Step 6: Cover and cook for 8 minutes. The pasta should be nearly cooked, with plenty of sauce remaining.

  7. Step 7: Stir in the cheddar. Top with the mozzarella.

  8. Step 8: Cover and cook for a further 2 minutes.

  9. Step 9: Remove from the stove. The pasta should be tender but firm, not mushy, and coated in sauce rather than dried out.

  10. Step 10: Serve immediately, garnished with green onion if using.

Notes

Variations and make-ahead

  • For a substitute for American chili powder, use 1/4 teaspoon each of paprika, cumin and coriander, plus a pinch of cayenne.

  • Other cheeses that melt can be used, but choose a flavorful cheese rather than a mild cheese such as mozzarella.

  • For more vegetables, add other diced vegetables or reduce the pasta and increase the vegetables. Zucchini and red bell pepper are suggested options.

  • To prepare ahead, cook the beef with the liquids, then store it until needed. Reheat the mixture on the day of serving, add the pasta and cook as directed.

The sauce becomes less plentiful as the pasta absorbs it, but leftovers reheat well in the microwave.
