Instructions

  1. Step 1: Use scrunched-up paper towels to pat the fish dry on both sides. This is especially important if you’re using thawed frozen fish.

  2. Step 2: Season the fish well on both sides with salt and pepper.

  3. Step 3: Mix the flour and paprika on a plate.

  4. Step 4: Coat the fish on both sides with flour, pressing down firmly so it adheres. Shake well to remove the excess.

  5. Step 5: Heat a heavy-based skillet, regular or nonstick, over medium-high heat until you see wisps of smoke. Add the oil and swirl to coat the pan; it will heat within seconds.

  6. Step 6: Add the fish; it should sizzle straight away. Shake the pan lightly to move the fish. Cook for 2 minutes until golden and crisp, pressing down gently, then flip. Cook the other side for 2 minutes until crisp, then remove.

  7. Step 7: If the fish is browning too quickly, remove the pan from the stove briefly. If it’s stuck, don’t move it; it will release naturally once golden.

  8. Step 8: Serve the fish immediately with lemon wedges and garnish with dill or parsley, if using. It starts to lose crispiness after 5 minutes.

Notes

This works with fish fillets with the skin on or off. Thinner fillets are recommended; have the fish pin-boned, and remove any scales if the skin is on.

About this recipe

For crisp, golden fish, pat the fillets dry, press the flour coating onto both sides, and shake off the excess. Heat the skillet before adding the oil, then serve the fish straight from the stove with lemon and herbs.
