  • Large nonstick skillet

Instructions

  1. Step 1: Put the seasoning ingredients in a small dish and mix.

  2. Step 2: Coat the salmon in the seasoning, shaking off the excess well.

  3. Step 3: Place the oil and about 1 tsp of the butter in a large nonstick skillet over medium-high heat. Once the butter has melted, add the salmon.

  4. Step 4: Cook the salmon for 3 minutes, or until golden brown. Turn and cook for 1 minute.

  5. Step 5: Add the remaining butter, garlic, and honey. Swirl the mixture around the pan as the butter melts.

  6. Step 6: Simmer for 1 minute, until the honey-butter mixture begins to bubble and turn golden. Add the lemon juice and shake the pan to disperse it. Taste the sauce and adjust the salt, pepper, and lemon to taste.

Salmon fillets simmer in bubbling sauce in a skillet with lemon slices and herbs.
  7. Step 7: Turn the salmon over to coat it in the sauce, then remove the pan from the heat immediately. Place the salmon on plates and drizzle with the sauce. Garnish with parsley and fresh lemon, if desired.

Notes

Mustard powder is not critical to the seasoning. Garnish with parsley or chives and lemon slices if desired.

About this recipe

A seasoned flour coating gives these salmon fillets a golden crust for the sweet honey-butter sauce to cling to. Fresh lemon juice balances the sauce, and the salmon cooks quickly in a skillet.
