Instructions

  1. Step 1: Heat the oil over high heat in a large heavy-based pot. Add the garlic and onion and cook for 1 1/2 minutes.

  2. Step 2: Add the beef and cook, breaking it up as you go, until no red meat is visible. Add the Italian herbs and cook for 30 seconds. Stir in the tomato paste and cook for 1 minute to cook out its raw flavor.

  3. Step 3: Add the crushed tomatoes, chicken stock, salt, pepper and red pepper flakes, if using. Stir, then add the pasta.

  4. Step 4: Bring the liquid to a simmer and cook for 15 minutes, stirring every couple of minutes at first and more frequently toward the end so the pasta does not stick to the base of the pot. Cook until the pasta is just about done.

  5. Step 5: Add the cream and simmer for a further 1 to 2 minutes. The pasta will still be quite saucy; it absorbs liquid quickly and will be creamy and loose when served.

  6. Step 6: Remove the pot from the stove and give the pasta a good stir. Ladle into bowls and serve with Parmesan and parsley.

Notes

Ingredient options and storage

  • Use dried oregano, parsley and basil in place of Italian herbs, or substitute 1 teaspoon Worcestershire sauce.

  • Other short pasta shapes, such as macaroni or penne, work well. Avoid very small shapes like risoni or orzo. If using long pasta, break it in half; you can use about 400g/14 oz.

  • Leftovers keep in the refrigerator for 3 days. This pasta is not suitable for freezing.
