Instructions

  1. Step 1: Put the flour, sugar, baking powder, and salt in a large mixing bowl. Whisk to combine.

  2. Step 2: Add the milk, eggs, and vanilla, then whisk to combine. Add the melted butter and whisk until the batter is lump-free. It should be pourable but thick, slightly thinner than pancake batter.

  3. Step 3: Cover the batter and refrigerate overnight, or for at least 2 hours, for softer insides and better flavor. You can also proceed straight to cooking.

  4. Step 4: Preheat a waffle maker. If it is nonstick, you do not need to oil it; the batter contains butter.

  5. Step 5: Use a ladle to pour in enough batter to just cover the waffle iron. Avoid overfilling, as the batter can leak out the sides. Cook until golden and crisp. Cooking takes about 3 1/2 minutes in one waffle iron or 6 minutes in another.

  6. Step 6: Transfer the waffles to plates and serve as they are cooked with your chosen toppings. Alternatively, place them on a rack and keep them warm in a preheated 70°C/150°F oven while you cook the remaining batter.

Notes

Store leftover waffles in the refrigerator for 3–4 days. Reheat them in a toaster or oven; they lose some crispness as they cool.

About this recipe

These waffles cook up golden and crisp, with soft insides. Serve them hot with butter and maple syrup, or choose honey, fruit, or another topping.

The batter can be cooked right away, or covered and chilled overnight for softer insides and more developed flavor. For the overnight rest, mix the batter ahead and cook the waffles fresh.
