Instructions
French toast
Step 1: Whisk the egg mixture together in a bowl, whisking vigorously so the cinnamon does not float on top.
Step 2: Melt 15 g / 1 tbsp butter in a non-stick skillet over medium heat.
Step 3: Quickly dip a slice of bread into the egg mixture, coating both sides, then place it in the pan. Repeat with more slices, leaving space in the pan; cook 2 or 3 at a time.

Step 4: Cook for 2 ½–3 minutes on each side, until the surface is golden, then transfer to serving plates.
Step 5: Add more butter to the pan and cook the remaining bread.
Step 6: Serve with butter and plenty of maple syrup, and add the macerated strawberries if using.
Macerated strawberries (optional)
Step 7: Toss the strawberries with the sugar and set aside for at least 20 minutes, until softened and juicy with a little syrup.

Notes
Slightly stale bread works best because fresh bread can soak up the egg mixture too quickly and turn soggy. To dry very fresh bread, place it in an oven at 180°C/350°F for 3 minutes on each side, just until slightly dry without browning. Skip this for crusty sourdough.
Brioche is the most indulgent option. Challah, thick-cut white sandwich bread, other plain white breads, and crusty artisan breads are also listed as choices.
The nutrition information is for plain white sandwich bread and excludes toppings.

About this recipe
This French toast has a custardy center and golden edges. Brioche makes it especially rich, while white sandwich bread works too; slightly stale slices are best.
