Instructions

  1. Step 1: Heat the oil in a large pot over medium heat. Add the garlic and stir for 10 seconds. Add the cayenne and chilli flakes. Cook for 1 minute, or until the garlic is light golden.

  2. Step 2: Add the tomatoes, salt, and pepper. Rinse the tomato cans with water and add the water to the pot.

  3. Step 3: Turn the heat up to high and stir. Once the sauce comes to a simmer, reduce the heat to medium and simmer for 15 minutes. Taste it at the 10-minute mark; if it is sour, add the sugar.

  4. Step 4: Meanwhile, bring a large pot of water to a boil with the 1 tablespoon of salt. Add the pasta and cook according to the packet directions.

  5. Step 5: Just before draining the pasta, give the pot a big stir to agitate the starch. Scoop out 1 cup of the pasta water and set it aside, then drain the pasta.

  6. Step 6: Add the pasta to the sauce with 1/2 cup of the pasta water. Toss well on the stove until the sauce coats the pasta. Add more pasta water if needed to loosen the sauce.

  7. Step 7: Divide between bowls and serve immediately with Parmesan and parsley, if using.

Notes

Adjusting the heat

For a milder sauce, remove the cayenne seeds or leave out the cayenne. Start with a small amount of chilli flakes, taste the sauce as it simmers, and add more a little at a time to suit your preferred heat.

Storage

Refrigerate leftovers for 3 to 4 days.

Optional additions

Try cooked shredded chicken, ham, olives, artichokes, sun-dried tomatoes, or cooked vegetables. Add raw prawns or pieces of fish near the end of cooking.
