  • Colander
  • Small bowl
  • Large nonstick pan or well-seasoned skillet
  • Wooden spoon

Instructions

Method

  1. Step 1: Place the noodles in a large bowl and pour over plenty of boiling water. Soak for 5 minutes, then drain in a colander and quickly rinse under cold water. Do not leave them sitting for more than 5–10 minutes.

  2. Step 2: Mix the sauce ingredients in a small bowl.

  3. Step 3: Heat 2 tablespoons of oil in a large nonstick pan or well-seasoned skillet over high heat. Add the garlic and onion and cook for 30 seconds.

  4. Step 4: Add the chicken and cook for 1 1/2 minutes, until mostly cooked through.

  5. Step 5: Push the chicken to one side of the pan and pour the egg into the other side. Scramble it with a wooden spoon, adding a little extra oil if the pan is too dry, then mix it into the chicken.

  6. Step 6: Add the bean sprouts, tofu, noodles and sauce.

  7. Step 7: Toss gently for about 1 1/2 minutes, until the sauce is absorbed by the noodles.

  8. Step 8: Add the garlic chives and half of the peanuts. Toss briefly, then remove from the heat.

  9. Step 9: Serve immediately, topped with the remaining peanuts and accompanied by lime wedges. Add a sprinkle of chilli and a handful of extra bean sprouts if desired. Squeeze lime juice over the noodles to taste before eating.

Notes

The recipe also describes ketchup as a substitute for tamarind puree, with a changed sauce mixture. Tamarind concentrate is stronger than puree and is not a direct one-for-one substitute.

Garlic chives can be replaced with chopped shallots, also called green onions or scallions.
