Preparation

  1. Step 1: Combine the fish marinade ingredients in a zip-top bag. Set aside to marinate for 20 minutes, and no longer than 1 hour.

  2. Step 2: Place the pickled cabbage ingredients in a bowl and toss to combine. Set aside for 30 minutes. Drain off excess liquid, scrunch the cabbage with your hands to help soften it, then set aside.

Notes

Fish and ingredient swaps

Snapper, barramundi, tilapia, basa, cod, John Dory, Silver Dory, ling, bream, haddock, pollack, and monkfish are listed as suitable fish choices. The recipe advises against lean fish such as swordfish, tuna, and kingfish, and very delicate fish such as Dover sole and flounder.

If chipotle powder is unavailable, use 1/2 tablespoon each of smoked paprika and cumin, plus 1/2 teaspoon cayenne pepper. To make the sauce less spicy, replace some or all of the sriracha with ketchup.
