Instructions

Tartare Sauce

  1. Step 1: Mix the tartare sauce ingredients in a bowl. Set aside for at least 10 minutes.

Toast Breadcrumbs

  1. Step 2: Preheat the oven to 180°C/350°F.

  2. Step 3: Spread the breadcrumbs on a tray. Spray oil directly down onto them, not from the side.

  3. Step 4: Bake for 3–5 minutes, until golden. Immediately transfer the breadcrumbs to a bowl.

  4. Step 5: Brush the tray clean and spray it with oil.

Crumbing and Baking

  1. Step 6: Cut the fish fillets into roughly square shapes slightly larger than the buns; they shrink as they cook.

  2. Step 7: Mix the batter ingredients in a bowl.

  3. Step 8: Carefully coat the fish in the batter, as the fillets can be delicate.

  4. Step 9: Place the fish in the breadcrumbs. With your other hand, cover the top and sides with breadcrumbs, pressing them on to adhere. Transfer the fish to the tray and repeat with the remaining fillets.

  5. Step 10: Bake for 12–15 minutes, until the fish is cooked through. Immediately top with cheese and let the residual heat soften it. Do not melt processed cheese in the oven, or it will form a film.

Assemble

  1. Step 11: Cut the buns in half and microwave for 20 seconds to warm them through and keep them soft.

  2. Step 12: Top the buns with the fish and cheese, then add a dollop of tartare sauce.

Notes

Panko breadcrumbs give the coating extra crunch. Use flat, thin white fish fillets so they can be cut to fit the buns; the fish may warp as it bakes. Brioche buns are recommended, and soft hamburger buns also work.

The tartare sauce makes more than the burgers may need; any extra keeps in the fridge.
