Instructions
Dressing
Step 1: Blitz the dressing ingredients in a food processor until they form a smooth, bright green sauce.
Step 2: Add extra water to thin the dressing to a pourable consistency.
Salad
Step 3: Put the tomatoes in a bowl. Sprinkle with a pinch of salt, mix with your hands, and leave to rest for 10 minutes to draw out a little juice and make them juicier.
Step 4: Drain the tomatoes. Mix them with the onion in a serving bowl.
Step 5: Drizzle the dressing over the tomato salad.
Step 6: Sprinkle with a pinch of garam masala, if desired.
Notes
The dressing makes more than this salad needs. Serve the extra alongside the main dish.
The dressing is intended to be thin and pourable, whether used on the salad or served as a sauce.
