Instructions

  1. Step 1: Heat the oil in a large saucepan over medium heat. Add the garlic and onion and cook until translucent, 2–3 minutes. Add the dried basil and cook for 20 seconds; do not let it burn.

  2. Step 2: Add the rice, broth, tomato paste, paprika and sugar. Mix until the tomato paste dissolves.

  3. Step 3: Crush the basil sprig in your hand, drop it onto the surface of the rice, then push it in. Leave it on the surface; do not stir.

  4. Step 4: Cover and bring to a simmer, then immediately reduce the heat to medium-low, or low if your stove runs strong. Cook for 15 minutes or until the liquid is fully absorbed. Tilt the saucepan to check.

  5. Step 5: Remove the saucepan from the heat and set it aside, covered, for 10 minutes.

  6. Step 6: Remove the basil sprig. Fluff the rice with a fork and taste for salt. Leave it uncovered for another 5 minutes, then stir through the fresh basil and serve immediately.

Notes

Rice and herb notes

Long-grain white rice gives the fluffiest result. Basmati and jasmine rice also work, with a subtle aroma from each. Medium-grain white rice is another option, followed by short-grain rice. This recipe is not suited to paella rice, risotto rice or minute rice.

For a different herb flavor, swap the dried and fresh basil for another herb and adjust the amount to taste; strong herbs such as rosemary need care. The rice keeps well in the fridge and benefits from fresh basil when serving again.
